Foodie Friday: Strawberry Shortcake


This delectably rich Strawberry Shortcake, loaded with strawberries and topped with creamy whipped topping, can be found at Disney's Hoop Dee Doo Musical Revue. This is yummy deliciousness served in a cold metal bowl. It’s been one of my favorite desserts since I was a child.

They sing the “Strawberry Shortcake” song to let you know it’s comin’, and they’ll keep bringin’ ya more until you’re done! Not making a trip anytime soon? No worries, here's the recipe. Enjoy!

Strawberry Shortcake
Yield: Approx. ½ Sheet Pan (17″ x 12″) 

Yellow Pound Cake
Step 1
1 ¼ pound Cake Flour
1 ¼ pound Granulated Sugar
¼ ounce Baking Powder
Pinch Nutmeg
½ ounce Salt
½ pound Shortening
¼ pound Butter
8 ounces Milk

Step 2
6 Eggs
4 ounces Milk
½ ounce Vanilla
(Almond Extract can be substituted for vanilla)

1) Sift and blend all dry ingredients from Step 1 together. Add shortening, butter, milk, and mix 5-7 minutes at low speed.
2) Combine all ingredients from Step 2 together and blend lightly.
3) Add liquid mix from Step 2 to Step 1 in three parts, scraping down bowl between. Bake at 350 degrees until tester inserted into cake comes out clean.

Topping: Add whipped cream and Smucker’s Frozen Strawberries (thawed) to taste.

Wednesday with Walt: Every Year Counts!


This coming Sunday, I will celebrate my 48th birthday. When preparing to write this week's Wednesday with Walt, I began to wonder what exactly Walt was doing when he was my age. He had undoubtedly accomplished much more than I, to say the least. In fact, right around his 47th birthday he announced to his friends, colleagues and employees a little 160-acre dream that had been brewing in his mind. He told them he was interested in building a theme park.

I experienced Mickey's Not So Scary Halloween Party at Walt Disney World for the first time last year. I fell in love with it and plan to go as often as I can in the future. One of the things I was exceedingly excited about was seeing the Magic Kingdom all decked out in Halloween decorations. I had never been during Halloween before, as my family always visits for Thanksgiving, but it was awesome. Here are some pictures of the Magic Kingdom decked out for this event.

Disney Parks: Tip Boards



We all know that there are smart phone applications for just about everything nowadays. If you can't find one that does what you need, just wait a minute and it will pop up. There are even several that tell you how long the waits are at the various rides at Disney parks. They are not always extremely accurate, though, and for those of us who either can’t afford a smart phone, choose not to have one, or just don’t want to use the apps for that purpose, we can still rely on the old fashioned tip boards to fill us in.

Wednesday with Walt: Happiness Is...


I have a book called, The Charm of Simple Things, by Jack Countryman. It is a lovely book full of short stories, poems and beautiful illustrations by Maren Scott. I grab this book whenever I am needing alittle quiet time and enjoy reading it while sipping a cup of coffee or hot chocolate. It is filled with reflections on the simple things in life.  Beautiful and inspiring, it is one of the treasures of my personal library.
